THE BURGER BAR

Located in the Mandalay Bay shopping area, The Burger Bar is not one of the fancy restaurants in Vegas, although it probably serves the most expensive burger in town.
We believe this one, the Rossini, is way overpriced -despite its expensive ingredients it costs $60–, so we decided to order two “build your own” burgers, the Vegas Vegan and the Chocolate Burger.
For the “build your own” we decided to try Angus in a sesame bun with Portobello mushrooms, Provolone cheese, onion, bacon and Black Perigord truffle sauce for one of the burgers; Wagyu beef in a pretzel bun with peppered bacon, sliced jalapeño, caramelized onion, pepper jack cheese and chipotle aioli for the other.
The Angus beef patty was so good that I don’t think it was worth paying almost $8 more for the Wagyu, although both were perfectly cooked (medium-rare), juicy and flavorful, with the perfect ratio fat/meat. The sesame bun was very good, although I would have liked it slightly sweeter. The pretzel bun was a little dry. The chipotle aioli was tasty but the truffle sauce was a bit disappointing, as it wasn’t as intense as expected.
The Vegas Vegan lacked flavor: even adding the truffle mayo the veggies were under-seasoned. All the flavors seemed very flat and there was no contrast of textures. It wasn’t a good choice.
The chocolate burger was a funny trompe l’oeil, with a perfect imitation of the cheese. I found the doughnut bun too sweet, but probably a lot of people would like it like that.
