Three yummy appetizers and very few calories
Yesterday we were preparing some empanadas (check the video soon in our blog) and one of the members of the Spanish-speaking gang invited us for a pot luck dinner tonight (as you see we don’t need much time to set up a party). We have a group chat and they all started organizing the dishes they will prepare: quiche, “tostas” with sobrasada, honey and nuts, rice… and I am trying to stick to my diet !! Ok, I thought, I have to bring something tasty, suitable for a pot-luck dinner and it must be a low-calorie dish…. Mmm… So I came up with these three tapas ideas. One is very traditional in Spain, the other two are classics with a twist.
Here is the first one: endives with creamy blue cheese, duck ham and mango.
My idea was to use duck ham but I couldn’t find it so I used bacon strips. You can prepare everything in advance and put it together 10-15 minutes before serving.
Ingredients
2 endives
100 grs. (4 oz.) duck ham (or bacon stripes)
1/3 cup of mango, peeled and diced
1 pkg. (8 oz.) cream cheese (low-fat)
50 gr (2 oz) blue cheese
4 dates, pitted and finely chopped
¼ cup chopped walnuts or pecans
Preparation
STEP 1.- Place the duck ham slices between two sheets of baking paper and two oven trays (the top tray will keep the paper from moving and flatten the duck ham) and bake for 15 minutes at 375ºF/180ºC. Take out of the oven, place on paper towel and let cool down until crispy.
If you are using bacon strips, just fry until very crispy, place on paper towel and reserve.
STEP 2.- Mix the two cheeses, the chopped dates and the walnuts. Reserve covered in the fridge. Separate the endive leaves, wash and dry. Choose the ones with a similar size and keep them in a zip-lock bag in the fridge.
STEP 3.- 10-15 minutes before serving, put a dollop of the cheese mix on each leaf and decorate with mango and duck ham.
Tip: Place a bowl with the remaining cheese mix in the center of the plate (you can not see it in the picture because I forgot to bring it).
