Pasta shrimp salad

Really easy to prepare, this is one of the dishes I make when I want to reduce some calories and go healthy. The only secret: quality ingredients, especially the olive oil. The more flavorful it is, the less you will have to use.

Ingredients (serves 2)

 

200 grs. (1/2 pound) boiled short pasta

200 grs. cooked shrimp

1 cup diced tomato

2 tbsps. chopped black olives

1 tbsp. capers

salt

1 tsp. EV olive oil

 

Preparation

 

STEP 1.- Choose a short type of pasta, like mini elbows or small shells, and boil it in plenty of water with salt. (1 liter of water and 10 grs. of salt per 100grs. pasta).

STEP 2.- Rinse when ready and add the oil while the pasta is still warm to bring out the aroma.

SETP 3.- Mix with the rest of the ingredients and toss.

Tips

–       You can use green olives instead of black olives, but they add a more acidic flavour.

–       If I don’t have shrimp, I use tuna and add some diced red pepper.
