A few days ago I bought a whole boneless turkey breast that weighed about 4 pounds. I decided to prepare it in two different ways, both suitable for a low-carb diet (that I am following in order to get ready for the Christmas holidays).
As you might know, diets are boring, so I try to cook different recipes that help me survive another day without bread. At the same time, when following a diet, I normally have limited ingredients that make me spend a lot of time thinking on how to avoid repeating myself.
Luckily, sometimes it is easy: not a lot of thinking in this recipe, but still turned out really tasty. Even the pickiest eaters at home found it delicious!
Ingredients (serves 4)
2 pounds of turkey breast in one or 2 pieces
1 cup low-fat cream cheese
1 cup sour cream
1 cup chopped shallots
2 tbsps. finely chopped chives
2 garlic cloves, finely chopped
½ tsp. chili powder
EVOO, salt and pepper
Preparation
STEP 1.- Preheat the oven to 400º
STEP 2.- Sauté the shallots in 1 tbsp. of extra virgin olive oil until transparent. Add the garlic when almost ready, sauté for a couple of minutes over medium-low heat and let cool down to room temperature.
STEP 3.- Once it has cooled down, mix with the sour cream, cheese, chili powder and chives.
STEP 4.- Heat 2 tbsps. EVOO and when hot but not smoking, add the turkey and cook over medium-high heat until evenly brown.
STEP 5.- Season the turkey with salt and pepper and place it in a casserole; cover it with the sauce and bake in the oven for 30-45 minutes (depending if it is one piece or two)
Tips
Serve with a fresh and crunch salad to add some contrast of colors and textures.
